Four Grain Saison. This beer represents the progression and evolution of our saison fermentation program. Ourison is our saison, SaisonHands, left to condition in oak and then allowed to fully express itself via a lengthy can conditioning period. The end result is a highly refined, snappy, and pungent beer that is one of the most simplistic and exciting iterations of saison that we have ever produced.
Notes of oak, bitter grape, and tart lemon.

Brewed with huge quantity (240lbs/20bbls!) of Pine Barren honey from our comrade Patrick Ryan of Fruitwood Orchards. We added it during the tail end of fermentation to maintain its delicate floral subtlety. Dry hopped into another sticky dimension with pungent Mosaic lupulin powder.
Notes of crazy ripe honeydew melon, drippy mango flowers, and dank ruby red grapefruit.

Originally brewed way back at our humble BrewCafé, Death Tripper is built on a hill of fluffy flaked and malted oats and a touch of wheat. We hopped and dry hopped this batch (and every batch) with out-of-this-world Galaxy and a small dose of Simcoe! Take a Trip!

Our last brand new beer of 2025! This one features a brand new hop, Dolcita! Born from a base of 2 row, oat malt, and wheat malt. Hopped in the kettle with amazingly fragrant Dolcita, Motueka, and Citra; then blasted with a dry hopping of more Dolcita, Motueka, Citra, and a bit of Simcoe to round out the flavor. The Dolcita hops lend a unique creamy citrus and peach flavor.
Notes of pineapple soft serve, orange creamsicle, and peach rings.
Trendler Schwarzbier

Brewed with pilsner malt, as well as a tasteful flurry of German specialty and dark malts. Hopped assertively with German Hersbrucker from our buddies in Bavaria, fermented with our house lager yeast, and cold conditioned for four weeks. Extremely stark, restrained, and elegant, yet eminently crushable.
Notes of black tea, medium toast, cinnamon raisin, Ethiopian coffee, and fertile earth.

Trendler Alt is the original Trendler bier, brewed as a dedication to Jean’s grandfather Joseph Trendler. Composed of German pilsner malt and a tasteful assortment of domestic and imported specialty malts, and delicately but meaningfully hopped with classic German varietals. Fermented with a yeast strain derived from our favorite Altbier producer from Düsseldorf, and lagered for 3 weeks. Annually released right before the Thanksgiving holiday because it’s never too early to give thanks.
Notes of oolong tea, toasted black walnut, light toast, and pomegranate molasses.

Another funky and blissed out installment in our genre-defining culinary IPA series with @Omnipollo! Brewed with a heavy bill packed with oats and lactose sugar and hopped with the almighty combo of Citra and Mosaic. We then hit it with a double dose of bursting Madagascar vanilla beans and a truly unwise amount of bold and flavorful calamansi puree.
Notes of creamy calamansi bars, lime curd, and Filipino lemonade.

We hopped and dry hopped this batch with out-of-this-world Galaxy and a little bit of Simcoe. Then this got decimated with a double and TRIPLE dry hopping of dank New Zealand Motueka!
Notes of donut peaches, slightly underripe pineapple, and Super Lemon Haze.
Extra Vanilla Milkshake IPA

The next in our annual experimental series of pilsners/lagers. Each year, we stray from the traditional pilsner/lager brewing processes and ingredients to explore where we can push the boundaries. This iteration is brewed with pilsner malt and blonde roast oats; using oats in this style is untraditional. We hopped it with Czech Saaz, commonly seen in pilsners, and American Comet, uncommonly seen in pilsners. This year is one of our best yet.
Notes of hay, honey green tea, and summertime.
